That is true farm to table joy.
The Stenner Farm recipe has fresh blackberries. They are sweet and the perfect addition to honey butter on the cornbread.
Let’s start with the cornbread. Preheat your oven to 350º. In a bowl, combine cornmeal, flour, sugar, baking powder, and salt. Add the oil, melted butter, honey, eggs, and milk. Pour into a greased 8-inch square pan, muffin tins or round cast iron skillet. Bake for 35 minutes.This pan is one of my new favorites that I purchased on Amazon.
It makes a yummy dish beautiful. And it’s gold…what? I’m fighting the urge to hang the pan on my wall as a decoration. It’s that cute. I usually don’t splurge on cookware, but this one was worth it. Nordic Ware Honey Comb Pan Link I love that it makes the cornbread a pull-apart recipe. Hooray for no cutting pieces. I sprayed some cooking oil in it before I started, and the cornbread pops out easily after it’s cooked. It’s fun to have a dish with a bee hive themed pan and honey as an ingredient.
Now it’s time to start the whipped blackberry honey butter. Whip butter, honey and powdered sugar with mixer until fluffy. Fold in blackberries. Mix only until berries break up and are distributed. Form into a log and refrigerate or freeze. You can also serve it scooped from a small dish.
Complete Sweet Honey Cornbread Recipe & Ingredients:

¼ cup of cornmeal
1 ¾ cups of flour
1 cup of sugar
1 tablespoon baking powder
½ teaspoon salt
1/3 cup oil
3 tablespoons of melted butter
1 tablespoon honey
2 eggs beaten
1 ¼ cups of milk

½ lb softened butter
¼ cup honey
½ cup powdered sugar
¼ cup blackberries
We usually pair our cornbread up with smoked BBQ or chili, but the options are endless. I have a friend that serves it up with Sunday brunch. Maybe that will be my next brunch menu item.
